This recipe is a step-by-step guide to show you how you can make authentic restaurant quality Badami curry within a much shorter period of time.  Think of it as the cooking and assembly instructions.

This is the cheat sheet for people who are on the go but still want the real curry taste within a short time frame at the end of a day.

You can even prepare this Badami curry in batches, refrigerate and just slow cook it in a crock pot the day that you want it.

  • 700 grams of chicken breasts
  • Badami Curry Sauce
  • 2 Brown Onions
  • Olive oil (or equivalent)

How to make this amazing Badami curry….

Prepare the chicken breasts by cutting into pieces, cubes or strips for the Badami curry

STEP 1

Prepare the chicken breasts by cutting them into strips or cubes (your choice)

STEP 2

Prepare the onions by slicing or dicing into small pieces and then fry them off in a frying pan until they brown evenly.

STEP 3

Sir fry the chicken breast pieces in hot oil for 6 minutes in a wok or frying pan on a high heat.

Keep turning every minute so they evenly begin to brown on all sides

STEP 4

Lower to a medium heat and then add the curry sauce stirring continuously for 2 minutes to make sure each piece of chicken is coated.

STEP 5

Add the onions into the pan and stir these into the sauce for another minute.

Lower the heat to simmer the curry for 15 minutes.

The curry sauce should just gently bubble.

Keep stirring the curry to ensure it cooks evenly.

STEP 7

If you are serving the curry now, this is the time to start cooking the rice. Do this with the method that you prefer to cook rice (on the hob or in the microwave etc).

Serving Later?

If however you intend to serve the Badami curry later, this is the time to transfer the contents of the pan to your slow cooker or crock pot.

Set it to low and leave it to let this delicious Badami curry gently slow cook further, tenderising the meat for 3 or 4 hours.

STEP 8

Simmer for a further 10 minutes until  the chicken is nice and tender. Check that the meat is fully cooked through.

Serve with rice, popadoms or naan bread and enjoy
