Air-fried Hasselback Halloumi Chicken

This is a four ingredient air fried hasselback halloumi chicken recipe. This is one of those easy dinners that is just so delicious and simple to prepare.

Incidentally, Hasselbacking is a method of cooking that was created around the late 1940’s or early 1950’s in a restaurant called Hasselbacken in Stockholm, Sweden. The restaurant is part the Hasselbacken Hotel which is very close to the ABBA Museum if you are going to visit Stockholm.

Anyway, let’s get back to the recipe. This is what you will need and how you make it;

 

Ingredients

  • chicken breasts
  • 25g halloumi cheese (per chicken breast) light halloumi tastes better
  • 2 tsp harissa (per chicken breast)
  • 2 tsp honey (per chicken breast)

 

 

Method

  1. Hasselback some chicken breasts – usually 4-5 cuts should be enough
  2. Add half a slice of halloumi into each slit that you cut
  3. Then mix 2 tsp harissa and 2 tsp honey (per breast)
  4. Brush this all over the chicken and halloumi. Spend time getting right in the cracks
  5. Air fry for around 18-22 mins at 180 degrees but it will depend on the weight and how thick the chicken breasts you are using are.
  6. Baste with a little more of the harissa & honey mix halfway through cooking as this will only help to make the chicken so deliciously juicy.

 

These stuffed chicken & bacon breasts can be served with many combinations including the following popular suggestions:

  • Hash browns, sweetcorn or mushrooms and a white wine sauce
  • New potatoes, vegetables and a peppered sauce
